Does 379rwhp seem reasonable for a tuned bolt-ons LS2?

You have to remember that not every mod is going to show an improvement if it wasn't a bottleneck or a true improvement over the stock part it replaced. You may see an improvement with long tube headers but how much depends on if the shorty headers were a restriction. After the header swap your next step will probably need to be heads, Good heads will compliment all the improvements you already made.

Roller rockers help mid range alot to.
A ewp(with belt mod) helos errywhere. A crank scraper has more benefits at high rpm.
A good ported fast seems to favor top end power for his rpm range.

Yes but even the same ratio helps some. The stock rockers are a variable ratio. They start at 1.52 and ramp up to 1.7. A standard 1.7 will open the valve faster and a 1.8 even more fast and higher. Being you have a ls2 the cam is slightly lacking anyway a set of 1.8 rockers would do well on it. Especially since a ls2 already has ls6 valve springs. The added lift is covered.

Another thing if you are doing the flex fuel on the GTO you can get everything dirt cheap on Amazon for like 100$ install is pretty simple you can find write ups on ls1gto and Facebook (Search how to Flex fuel the 05/06 GTO in under 60 seconds) the tuner will have to enable flex fuel and tune afterwards but installing it yourself will save money. The gains wont be to drastic for you maybe 10hp at best I personally would ditch the 85mm Maf and switch over to a card style LS3 maf in a 100mm tube and swap the ls3 TB for a NW102 Tb as that duespeed intake is a 92mm if i recall.

Considered the flex fuel thing for a while. But don't forget about the cost of upgrading the injectors and adding to the tune, that makes the process somewhat less attractive for the potential gains. It gets worse if you also upgrade the fuel pump at the same time. Kinda the same deal for the NW102, is the juice worth the squeeze for my set up? Like you said, that would really only benefit if a number of other mods came along.

It may not be worth it now but in the long run say Heads Cam you will have everything in place to optimize the setup its really about your long term goals for the car. Honestly with the cost of the LSA swap being so cheap for the GTO its almost pointless now and days not to go boosted. The boost district kit is pretty cheap relative to the power you would make over heads cam, I wish i would have went that rout instead of trying to push the NA envelope.

You could have done the ebay china 102 over buying that ls3 tb. For a bolt-on car you MIGHT have enough in the stock injectors on e85, but you can always go up to 42lb ls3 injectors for cheap. I'm don't think you'd need to do a fuel pump while staying bolt-ons. I would do the ls3 card maf as well, its also more tunable.
