Depends on how crazy you want to go on the heads and cam and the drivetrain behind it.
The motor in my vette was a 408 11.5:1 with TEA TFS 225 heads and a 240-246-600-600-114 cam. Thru a 4l65 it made a bit over 500 on a nitrous tune. A motor tune should see ~550.
The motor took some decent hits of nitrous without a peep and got around 30 mpg cruising on the highway.
I'm thinking of going with another 408 in my next car but using the ls3 heads and intake on it.

It's mainly a cost issue. If you have the extra money to spend, then by all means go with a bigger cube motor. It will make more power and have better driveablity manners. Most average 408 combos will make 500 to 580 wheel horse power and drive nicely. Of coarse this comes along with a good matched combo and a tune to go with it. Just keep in mind that with more power comes the need for better parts else where, such as tranny upgrades, fuel system needs, rear end and suspension needs also. There's not much of a down side to a larger stroker combo other than price but with the trade off of more power.

ive been thinking about the same options, but I dont think I want to be to over the top. Im swaying back to a LS2 build and I can still use my AFR 205 heads, 90/90 headers, oil pan. Just to make it more of a budget build. Ill leave HP on the table, but if Im over 500 RWHP, Ill be happy
then Ive got to find a tuner for it
