funny, I played with turbo buicks for a long time too. fast cars considering the technology
I am a big advocate of EGT tuning as long as you step up to put a sensor in each pipe for 8 channel EGT
helps see the temp variations per cyl and opens up opportunities for tuning by cyl.
not cheap but worth it!

I got my car running on the holley dominator and have been thinking of this too since I can change fuel and timing per cylinder now. I might do a 8 bank setup off my manifolds .

8 is the way to go....in my opinion... 2 is pretty pointless as it doesnt tell you anything more than a wideband would.
timing per cylinder you still have to do by the plugs... but you can see heat differences in the EGT and you can balance the fueling per cylinder assuming your controller can do that (the Holley Dominator/HP stuff can)
