I have a few questions. I picked up a PT7175 .81 for my boosted gen3 4.8 build questions are is this turbo too little or will it work out just fine for my power goals of wanting 600-700? I picked up a set of 241's that were milled .021" my questions are, are they worth using & will these work for what I'm wanting? Forgive me if that sounds ignorant I'm still learning or should I just use the stock 862s? I'm also curious if I could run it with the stock cam or will I be hurting the engine or shooting myself in the foot for my power goals not having a cam specd for my application.

The stock cam and heads combo chokes the hell out of the 4.8 at anything much over 500rwhp, regardless of boost. For your goals at least a mild cam will be needed. The good news is that the bottom end will handle pretty much any abuse you throw at it.
