what i have.... 2001 ss, built bottom end (probe pistons, scat rods, stock ls1 crank, arp rods throughout), stock 241 heads, good springs, shitty 220/218 564 114 cam.... sts turbo, gt67. 8.65 CR. 3" OBX fmic
#1 thing is conservativity/safety of engine....
right now its tuned at 8psi, conservaticve.
over winter, installing meth injection.
what psi can i saftely run with this.....
and, will this psi be efficiently supported by my gt67....
with whatever psi suggested, what power can u predict if i made 440 @8psi and only 200
on the engine

With that compression and Cam you should be running 10lbs minimum.Also an intercooler or Meth is a must but I'd recommend the intercooler.I would say 14lbs/intercooler would be perfect for pump gas with your setup.
8lbs switched to 14lbs should net another 130-150rwhp.

My comment is I would have never ran probe forged pistons, but I'm thinking you have the car together already so it's too late to change that. I personally wouldn't take it past 14 psi, I broke probe pistons on a 302 because those ones had basically zero material under the crown, and the tolerances were pretty wonky on all of them.
