S80 with OFI kit and 355 LT1

I am using a 78 in Shawns truck. 98 C1500 5.7l vortec, stock bottom end. It comes into boost at about 3600rpms and makes over 5 by 4100. Before I did a lot of tuning in that area it would take about 4k to get it spining though.
Here is a vid of it leaving on 4psi at 4000rpm on the foot brake. He snuck up on it really slow in the video. It would get there really quick on the t-brake though.

My car is a 6 spd, so it will be hard to bring the boost up at the line like an automatic. That is one of my concerns with launching the car. I'm wondering where the balancing point of having too much or not enough turbo to have a good balance for street and strip. I would like to have a 355 CI that I can turn to about 6500 rpm's with 18 to 20 psi on (high boost, race gas) assuming 20 psi will not be attainable on 93 pump gas. Does anyone know what the limits of 93 pump gas would be in comparison to maximum boost you should run. 13 or 14psi would be my guess at the max you should run on pump gas (93 octane). I'm wondering if the 76 GTS will fall off to soon for the 6500 rpm range or if I will need to go with the S80 to accomplish the upper end of my rpm. I would really like to have my full spool between 3500 and 4000 rpm. Do you guys think this is reasonable to accomplish ?
The 76GTS can support up to ~950rwhp on the right setup... how much you looking for?

The S80 is by far the best all around for big power and good spool up.
Thanks for the chart as a basic reference. I agree that the S80 is a good middle ground for a T6. I willing to have the bottom end be a little soggy on my 355 CI so it does not hit so hard in the low rpms on the street. I'm probably going to do a set of LE3 heads designed around doing a Turbo. Should flow in the 270 to 280 ish with a LE3 head. Not sure on cam selection right now, but I will figure it out in the near future. 4000 rpm's is probably the max I wanna go with waiting for the turbo to spool and still have a pretty good hit, I'm thinking I might even spray it with a 50 or 75 shot at 3000 rpm's just to wake it up a little bit sooner.
My initial goals will be to get in the 700 rwhp range and then after I have the setup figured out I will probably start to push on it for much more
