Well I do have Iron block so, So I am sure that is adding to the problem but is a LT1 radiator going to make enough difference. Cruising down the interstate about 80 even then car runs hot. According to factory guage runs about 220 225 without AC on.

If it wasn't for my air dam, I'd be fucked.
Actually, I spent an hour last night bring my air damn back to a good angle using wire... It was getting "tired" from being pushed by air and being bent back once went I went over a parking space block a year ago... Ran it on the highway to test and my fans never even turned on... Awesome.
Maybe it's different on Camaros, but on closed front firebirds the air damn is absolutely essential when your radiator is in the stock angle. When your radiator is upright with the FMIC in front, then I guess you really have patience... Not me, I get stuck in traffic (Miami) and I like my AC so stock radiator at the stock angle for me.
Obviously on a race car, I wouldn't have these concerns.

I have a single pass be cool radiator on my camaro, and it runs at the 200* mark until i get stuck in traffic with the a/c on for more that 15 min, then it starts to creep up to 220-230* and i hate that, i'm running dodge srt8 fans as pullers and it still does the same thing... I'm thinking of converting the radiator to dual pass

From what I have researched about dual pass radiators, is that they are a bad idea, because they slow overall flow rate by a factor of 4. You need a thicker radiator. Dual 1-1/4" tubes or more. Water wetter might help as well.

Not sure if this will help you, but my car started running hot when I installed a small balancer! Its smaller diameter didn't turn the water pump as fast moving less water at low RPM, so I increase idle speed to 950rpm and temps went down, and notice if I was going down the road at 1700 rpm it would heat up, but if I stepped on it to 2300-2600 it would cool right down. Added a thicker radi and that helped a lot also. Good luck!
