yes, you will tell a night and day difference. and for the record, i'd GUESS a full second off your ET if you have drag radials on. 3.73's will make your car A LOT harder to launch than 2.73's so on street tires, you may only grab 0.5 off your ET due to the lack of traction.
FWIW, i'd recommend a stall over gears. 3.73's will kill your 10-bolt, a stall won't (on street tires). 3.73's will kill your mpg. a stall won't. going to 3.73's after a stall and 2.73's will only net you ~2 tenths because 2.73's will perform great with a stall since you'll flash right to the powerband and bypass the climbing rpm's making gears unnecessary.
