Default P/S and P/B Removal????????

So right now I have my car torn apart to freshen my motor, install AJE K member, QA1's all the way around, LCA's, Panhard, tranny ect ect. Car will make between 700-800 on the spray and I am at a crossroads on a couple of issues. The car sees both street and track duty. Since I have the car apart I am trying to make some room, shed some weight and get rid of the things I dont need.

Do I remove my power steering and switch over to a manual rack? I have skinnies on the front already. How bad is this gonna be on the street and how much do I really need power steering at those HP numbers?

Do I remove my brake booster and switch to a Mopar style master cylinder with proportioning valves? Or do I leave the brakes alone? Car stops very good as it is.

Have any of you guys done these and kept your car streetable? What are your experiences?
