As for the Camaro options, I would rather pick the option that starts me off with the nicest possible car to begin with, since beater restorations are time consuming and usually more expensive than just starting with a nicer car in the first place. Of course there are limits here, meaning that if I plan to modify the car extensively, then I wouldn't be looking for an ultra low mileage stock show car because much of the premium paid to get one will likely be lost due to said modifications.
But the other two options are based around totally different cars (and different from each other), so it's not really possible to draw a direct comparison. Either you want a Corvette, or you want an F-body. And if you want a Corvette, then either you want a C5 or you want a C6. Of the two Corvette options, I would definitely pick the C6 no question.

I was never a huge C5 fan starting from their release for the '97 model year. When I started seeing the first images of the completed C6 for 2005, I instantly noticed that everything about C5 appearance that I disliked was fixed for C6. I definitely won't be in the any group that prefers the C5 and/or C5 Z06 appearance over C6 as they both age. Having said that, there are other aspects of the C5 that I do prefer over C6, but exterior design is not one of them.

I think the C6 is much more refined and doesn't look as dated as the C5. But I agree with the FRC comment. It just looks goofy. But I still think they are beautiful at the same time. I am also looking for a car I can have for quite some time without issues. Although everything has its issues.

In the near term, a newer car will likely have less issues on average, simply because it is newer/more fresh/less worn. But in the long term, the fewer the gadgets (and newer cars tend to have more gadgets), the less issues you'll have to deal with when the car is older.

Having owned both a c6 and a c5z...
The c5z feels like a race car, I loved it. It's loud inside of the car too since it doesn't have sound deadening.. Just a pure raw street race car..
The c6 is nice, but it's too refined for my taste.. Bland interior, feels like a Lexus, Mercedes etc while your driving it imho
Daily driver with power? a c6 wins
Race car? C5z

Make sure you check out listings on Corvette Forum for some decently priced C6s and C5 Zs.

Based on your options, I'd go C6 LS3 all the way. I think the way RPM does, and suggest you find one with the 1LT option package (bare minimum), maybe a 1LT with the Z51 package for better suspension. Prices are falling and will continue to fall as more C7s hit the streets. As much as I'd love a C7, I think I'd be happier with a C6 just to minimize the amount of tech in the car. My perfect car would be a base optioned C6 GS (preferably in Carlisle Blue).
