Default 5.3 Operating temp
I have a 02 5.3 in my 69 Camaro with a decent cam.

What is the normal operating temp on this motor. I am running around 210. Just seems high.

I know in my 16 Suburban that is about where it runs.

Are you using a Mechanical Gauge or the gauge on the dash? 210 degrees on the dash is normal, in reality it is probably around 190.

I have Dakota Digital guages. I was using my lasar temp guage and you are right. The block is cooler than what the guages indicate.
