the sound that you hear in the exhaust is the gas exploding from combustion. so you think about the differences in the 2 engine's where combustion plays a role. the LS1 has bigger valves, bigger ports, and the aluminum block plays a small role in the sond as it "echoes" at the top of the cylinder where the gas explodes. firing order is one of the contributions too.
i noticed when my ex's car was crashed that the LS1 does have a deep tone, but that was when the Y pipe was fubared. the LS1 sounds more mechanical and raspy/quiet mainly because of having 2 cats and the stock muffler.

The reason a Lt1 sounds different to a LS1 is it's a different frigging motor. Don't let the fact that they are both 5.7 litre OHV's fool you, because that's the only similrity.
In fact the LS1 has almost as much in common for a Ford modular OHC motor as it does with the LT1.
As for aluminum blocks, well engines have been made from aluminum for years and years and plenty of them sound fantastic with deep note.
Just because alumium is fairly new to Chevy V8's doesn't mean it's actually new technology.
