If you can't ship the parts as soon as they are ordered, provide tracking numbers so the customer can tell when they will receive the parts. And follow up with confirmation. Then you aren't really going to succeed. And it won't matter what parts you offer. I have dealt with several of the vendors for our cars. Some sponsors here, some not. There are real companies, and pretenders. Waiting, waiting, waiting after spending significate change will not please customers.
You are going to need, at the minimum: bank backing, and some intelligent IT people.

I think the different performance packages would definately be great. It's definately gonna take alot of start up money to get your inventory built up but once it's up and going it sounds like you have the right idea for success.

More durable LS1 f-body upper dash pad replacements. I do not think I will buy another stock unit. In the absence of any alternative replacement units though, I am going to look into reinforcing my latest cracked one and either vinyl wrapping it myself or sending it off to a restorer to do. The stock piece is junk.

A nitrous fill up station that actually has a deep freezer, scale, ect ect.... I know a certain shop around here that just takes your bottle, no freezer and fills it. Pickes it up and guesses its around 10lbs.... so definatly a decent nitrous section.
