just do a search on here, thats what i did
I havent seen any how-to's on taking out the engine, but I did follow ls1howto.com's instructions on the "cam/head swap" page on some parts of the removal process

btw, are you gonna remove the engine from the top or drop the subframe?

Diffently take it out the bottom.

Remove air intake, fans, and radiator, disconnect brake lines from pump(only two), disconnect slave or shift cable if automatic. DIsconnect two plugs for pcm and plugs on the fender well. Put rear on ramps and lift front as high as the floor jacks hold.
Take two hand jacks and position on cradle. Another one on the crossmember. Take out crossmember bolts, the six cradle bolts and the six top strut bolts. Now its ready to start being lowered. Once its lowered just role it out. I used 6x6 on the jacks, they helped alot. Dont for get to disconnect the battery before doing any of this. Oh and dont forget the sway bar. I think thats about it. Pretty easy to do.

1 hour out the bottom, 6 out the top. I did mine out the top in my garage. Guys at work have the thing sitting in parts 1 hour after they start working on the car... Much easier out the top, but you need a lift.
