brake light in dash
I would start by spoofing the sensor and e-brake switch to have them send a nominal signal to the car and see if either is still bad. Unplugging the switch, so the wire doesn't touch anything, should do the trick for that. I'm not sure about the fluid level sensor.
If anything is touching the switch so that the wire sees ground, the system will think the emergency brake is applied.

More often than not, for cars of our age, we see this issue with the emergency brake switch. With the switch not actually switching anything, but providing a path to ground, the circuit is really sensitive. A hairball at the switch connection, etc. is all that is needed sometimes to set the light off.
That being said, if there is a hydraulic or ABS issues, that's a very serious thing and the car shouldn't be driven.
I've deleted ABS and grounded the lt grn wire to shut off the brake & ABS light, but i'd like to know what this is actually doing/connected to.

Do you have the complete schematic for all the connections on the EBCM?
My 95 is an LS swap car and I also have the LOW OIL LEVEL light on because that was not wired in the engine harness. It has went off since unplugging the EBCM and grounding the lt grn wire. I'm trying to understand why, and anything else this may be affecting.
EDIT: My mistake, I didn't notice PAGE 2 until I went thru it again. I already put my lower dash back together before counting the wires on that plug.
As suspected, nothing about oil level on the schematic.

I think I'm seeing some of these conditions show up now.
I originally saw the light go out when the others did and thought that fixed it, but it didn't. It has come on again at startup a couple times and then off. I think when the other 2 lights went out, I didn't pay close enough attention to realize the oil light wasn't ALWAYS on.
I'll check whats connected to C220 C . I'm guessing nothing off the top my head.
