I lied guys. The problem came back. No check gauges light this time and the temp reading is a consultant 210. Just a crazy idle and an engine service code for temp sensor. Just going to do all new wires to pcm and gauge I think.

Yes, I think I have the correct wires going to the correct portions of the pigtail. My question is now that the gauge reads correctly and there is no check gauges light, is my problem just between the pcm functions and the sensor?

If the gauge is reading a consistent 210 but the pcm still thinks there’s a sensor issue (idle shoots up and down at red light) and I get a SES light is it still a wiring issue?

Logic says it is still a wiring issue. Possibly a faulty connection in one of the repairs. The gauge is highly buffered and functions like more of a dummy light in most gm vehicles.
You can try checking the resistance of the wires with a helper manipulating the wires...wiggling, bending, pinching to see if the resistance reacts to the stimulus. Work especially around any junctions, connections, or repair. You have a lot going on in the pictures. Try to make the repairs as few as possible using long runs of wire to get past all of the damaged wiring. Just separating wire that has been damaged by heat is not enough, it has to be removed.

The car starts perfect every time and the only case of rough and jumpy idle wasn’t until the car got up to running temps. Can’t really work on the car until the weekends

So the wiring seems fine all around. Going to meter it. But the jumpy idle seems to occur when the fans kick on or when the temp gauge hits 210? Are the fans surging too much power? PCM issue? Any input guys?

Temp gauge is reading low in the video. The temp sensor is thermal variable resistor to ground, it doesn't matter which lead goes to ground or to the ECU. I'd measure the sensor directly with a multi meter to both pins while running the motor and then measure just the ECU wire while it's running and if the readings aren't the same it's a wiring issue. If you replace the ground side with a temp lead or the mutli meter you can figure out if it's the ECU or ground side issue.
