Coolant temp sensor issue 98 z28 help!!

Coolant temp sensor issue 98 z28 help!! Hey guys. It seems im having the typical coolant temp sensor issue in my 98 z28 ls1. Ive seen on here that its a pretty common issue with these but I have yet to find definitive information on the actions I should take when trying to tackle this.
I was having the issue of my gauge pegging all the out and causing the car not to start with a warm engine without mashing the gas to kill the injectors. my car is trying to start on a cold engine, always, flooding the cylinders. I obviously replaced the sensor and the gauge half *** worked reaching about a quarter when warm. drove it hard home and shut it off and it fired right back up again. thought I fixed it until the next day. gauge now will sporadically peg and sometimes the car doesnt want to start back up again.
I know im on the right track assuming Im dealing with a broken wire or 2, Im just curious if anyone knows the wire routing and best way to approach trying to locate the spot of the break in the wire or if theres something im missing. this is my daily driver but I work for myself doing fabrication and can basically pull my car in my shop and work on it during down time. Id like to get this little gremlin sorted out in a day and any and all help is greatly appreciated.
I also feel I should add that my speedo, tach and temp gauge are all malfunctioning and my other 3 gauges still work as they should.
