Water Temp Fluctuation

Water Temp Fluctuation Hi, i have a 2001 B4C Camaro with 128,000 miles & the water temp will move over to 260 a few minutes after starting. I started it today & turned the ac on, went back in the house for gatorade, got in the car & in less than one mile the temp was pegged at 260. Cut the ac off, window down, turned around & back to the house, heading back the temp dropped to a little over 210 & moved back toward 260 & then back close to 210. Cut it off & i could hear the fan running, it did the same more or less a couple weeks ago when i drove it to work (4 miles), and when i cut the ac off temp dropped back to 210, today was first time i attempted to drive it since then. Anyone experience this fluctuation & any ideas as to what is causing this issue.

Hi B52, i've got to go thru the maintenance info from previous owner, i think the thermostat was replaced in the last 3-4 yrs., don't remember if water pump was changed. This temp fluctuation just started after i went over to a local cow pasture 1/8 mile strip & made 4-5 passes. Couple days later the first time temp jumped & then a Code P0446 Evap. Emission Sytem came up, wondering if this code would have any effect on cooling system?
Stupid question, h A ve u confirmed that it actually is getting that hot? Do u have a scanner for live data? Only asking cause your first post said a few minutes after starting which it shouldn't get hot a few minutes after starting

Don't have a scanner; checked water yesterday & added approx. 1/2 gal., started car & ac on, temp up to 210 in a couple mins., drove around in subdivision & within 1/2 mile temp up to 260, cut ac off & back to house, cut it off & raised hood, both fans running, no water leaks visible, water hose on drivers side had small bubbles coming out around the hose, checked clamp & it was tight. Waited 10-15 mins & started car up, temp was slightly above 210 & started moving back up after 4-5 mins running. Tomorrow i'm going to remove radiator cap & start car to see if coolant is moving.
