can too much coolant cause your car to heat up?

may be a dumb question... but can too much coolant cause your car to heat up? im running no thermostat right now and for some reason when i do 0-like 100/120 pulls, my car heats up from like 180-210 and then goes back down again when i get off it.. usually the car sits a little below 180..
