still having low coolant light problems
I'm not sure what you've done so far, but it sounds like you have air in the line. Its a VERY COMMON occurrance for do it yourselfers... Happened to me, too. Check out this thread.

Also, removing the thermostat will not cause it to run cooler. What happens in this case is that the water does not have enough time in the radiator to cool because the flow rate is too high. I am having similar problems with my LT-1. I'm thinking that a higher temp thermostat may actually help it run cooler (if that makes any sense).
