Default Intermittent Overheating Help

Just bought 99 Camaro SS less than 2 months ago. Normal driving seems to have small amounts of boilover from the reservoir on long trips the car holds normal temp while i am moving on highway. Once i make stops for tolls the cars temp begins to rise and i shut it down at 260. After letting it cool i can again drive the car and it holds a steady 210 but each time i stop it begins to overheat.

Thermostat new, hoses replaced, system flushed and pressure tested. Does anyone have any idea what could be causing this?

Assuming the fans are coming on and there's no air in the system, something easy to to is replace the radiator cap - maybe it's not holding pressure?

Would I see the coolant by the reservoir if the cap was bad?

Yes both fans are working.
