You disassemble the stock Thermostat and use a 1/8" brass ferrule as a spacer on the inside of the housing, if you cut the spacer down to .090 thickness, it will open at about 168 deg.

i drove my car for several years on stock settings with the 160 stat and still saw benefits.
fans will help when sitting in the staging lanes, but a simple fan switch will do the same thing.
and if your sitting in rush hour traffic...who needs the added power from a cooler engine? as long as the car doesn't over heat due to some other issue...stock settings will keep it safe in traffic.
side note...watching the scanner my 160 stat keeps temps right around 175* when moving.
