Default Guys with Meziere, coolant temps too low?

I've noticed now that the weather got cooler here in texas, on the 15minute highway drive home my coolant may never even get up over 150-155 degrees. I'm assuming the 2 holes meziere recommends we drill into the thermo may be allowing for too much flow and causing the warmup to take too long? It doesnt take too long for the coolant to get over 120-130...but once it hits 145-150 it just sorta stays there if I'm on the highway.

I'm going to be buying a couple more thermostats and trying smaller/less holes to see if the problem is reduced. Anybody else having the same issue?

yup, out here in AZ it is ~60 for the high right now and the temps don't rise above 160 something cruising on the freeway. I would like to see 180 myself. I had thought about getting a different thermo as well. Let me know what you find out.
