Coils??????
You won't notice any improvement over the stock LS1 coils unless you move to the round truck coils with exposed heat sink on the back. Additional improvements can be had with the coils with a tune.
Stay with the stockers. Go with GM coils. Don't buy the MSD coils, they're no improvement over stock and have a high failure rate.
You can't change valve covers as yours are perimiter bolt, not center bolt.

i seen this the other day not saying to not go with them but there is no power increase .. they are easy to find and probably can find them on a 99-up 5.3 silverado at a junkyard or anywhere for cheap

If it was, you need to have a scan ran to find out which cylinder is misfiring or if all of them are. If it's just 1 or 2 move the coils around and see if it follows. Then move the injectors around or replace them with known good ones and see if it follows.
Replace the fuel filter regardless if you haven't done so recently. I check mine at least every other oil change, if you can't effortlessly blow through it with your mouth (connect a short piece of clean hose) then it's trash.
Check WOT fuel pressure.

yes gas filter I did not think about that. where is it? sounds stupid I know.
Also check your harness grounds.
Any black smoke from the exhaust?
With your mileage, you probably also need at least the front O2 sensors. You'll do well with Bosch 13111 O2 sensors for a Corvette. Longer cables and higher wattage heaters so you'll get to closed loop quicker. Many here run them.
IF you really think it's a coil, buy one or two (stock) coils from GM and swap them around and driving the car to see if the problem goes away. I would NOT reccommend you do the coil change to a LS2 truck version.
