Big Mike is correct, you want the whole assembly and as far as descreening it goes that is a mixed topic. But I left my screen in, in fact that was the whole reason I upgraded. I decided to get a larger maf than descreen the stock one because without the screen the air is too turbulent for the MAF to read properly unless you have a very good straight intake path.
My car does not, but a lot of people seem to have no trouble on f bodies. Your call there.

Just to rez the thread, I put on an 85mm MAF this weekend.
Cost was $50 on ebay and $29 for auto wiring solution's adapter harness.
Tunability was far easier than anyone here makes it out to be. The instructions for MAF dial in are found on HP Tuners/PCM Tuning sub forum here.
It also had the benefit of solving my warm start/ac/defroster issue. The car "feels" smoother now.

So far I still have no complaints with my sensor. I also upgraded the screen to an aftermarket larger mesh one. But so far my track results continue to show no improvement. I would not recommend this upgrade to anyone with a working stock MAF on a car not making past the 450rwhp mark unless it's a killer deal.

01 and up c5s also have 85mm MAFs. Not taking sides. But GM went with a 85mm 01 and up for some reason. I desrceened mine. Cam etc, good tune. Perfect idle and no drivabilty issues at all. Also ran fine when my car was bone stock.

It is only worth upgrading if your motor has reached the power point where the MAF has become a restriction (maxing out the MAF). If that has not happened, there will be no power gained.
If you upgrade the MAF to an 85mm version, you will want to upgrade to the FT 98mm Air lid so you do not have to use a reducer.
If you don't want to buy an 85mm MAF and want some extra flow potential, you can buy our ported MAFS ends which have a larger internal volume and no screens. You usually will need to tune the ECU after this to achieve the proper A/F ratio. Some cars that run a little rich from the factor at WOT will actually see a power gain from Ported MAF ends with no tune as it tends to lean out the A/F ratio.
