Default 180* Thermostat - someone please help me understand

This isn't F-body related, but I definitely think you guys can help me. I have a 2008 Dodge Ram w/ 5.7 Hemi. I am putting an e-fan on it this fall. The stock t-stat is set to open @ 203* and everyone on the Ram forums says that the operate best at 180*. My question is, I don't really want to mess with the t-stat, I just want to get rid of the clutch fan and put some efans on. So that said, would I need to set my efans to come on at 205* or so? I am trying to match the t-stat with the efans so that they operate efficiently and want to know the best approach for this. Again, my objective here is not to change out the t-stat. I want to keep the stock one. Thanks fellas!

The fans need to come on at a slightly higher temp than what the thermostat opens at. You also need them to come on when the a/c is turned on.
