Default Stock T-Stat on a Car Tuned for Lower Temp T-Stat?

I searched, doesn't look like this has been asked before. I just bought an ls1 and while it's running normal temps now, during my 400+ mile drive home it kept on rising and rising so I'm taking it tot he dealership next week for testing. I noticed the fans turn on at ~ 200-210*, lower than the stock setting, So I think it may have a 160* stat in there. If they find the thermostat is bad and they put a stock one in, and the car is tuned for lower, will it hurt any? Run hotter?

i think that is the stock settings for the fans.......if you had a 160 stat it would def be running a LOT cooler on the free way than what you have now

stock is 189 stat

I read that the second fan doesn't turn on until 230 on a stock car, but both of mine turn on right at 200*. But it still stays between 215-220 on my scan gauge (needle stays in the middle on stock gauge) on the freeway and stop and go, which is considerably lower than the climbing temps I experienced when I brought the car home on a long drive, where it was getting to 235-240+ on the freeway at 65-70mph before I blasted the heater and pulled off at a rest stop. Although I did not have the scan gauge I was reading the stock gauge at that time. I only recently borrowed this scan gauge to look at actual temps. It seems that the actual temperature readings form the obd port are higher than the stock gauge reads, so I wonder if my temps were even higher.

Well I don't believe it should get that hot even with the stock thermo, there's definitely a problem that gets worse the longer I drive it, could be the stat is bad, 160 or stock. I guess you answered my question and putting a stock one in wouldn't hurt if they thought whatever may be in there was bad or sticking intermittently.
