Can running 1 cat damage engine?
Currently running straight pipe on one side and kept the high flow cat on the other side. I had a friend just weld in straight pipe in place of the cat.
Everything still merges into the I pipe via the Y pipe.
My car has a mild cam(222/226) and headers and had a dyno tune.

To put simply: no. You will suffer some back pressure loss, but less pressure can't be a bad thing. The enhanced answer means your sensors will start going wonky as you will not be reading the CO2 correctly at your oxygen sensors. To correct this, tune them out. If you can get away without one cat, you can get away with two and should go full straight pipe. The other option is go to a pick it yourself junkyard and cut one off to get you by, or buy a new one....
