The factory k-member is a very beefy piece...I don't think you'd have a problem grinding off that much. My Kooks 1-7/8 headers were very close on the passenger side, but my poly motor mounts kept it from hitting.

I removed 1/4 inch or more on mine to clear LPP stainless headers back in the day. No big deal that thing is stout.

Thanks guys. Yeah its not a matter of hitting under throttle, the collector tube is accually smashed up against it just sitting there..its crazy how much these cars vary in their build..

Mine was doing the same thing. The header was just smashed up against it, I had poly motor mounts, and my car used to buzz, rattle, and vibrate really bad at red lights and idling but I just thought it was the extra vibration that everyone talked about the poly motor mounts adding. I ignored it for about a year until my car was on a lift and realized what was causing all the really bad vibration and buzzing. I pry'ed back on the header a little bit and had a buddy whack a good portion off with a cutting torch. The car felt brand new afterwards, absolutely no vibration or buzzing was present. You'll be safe to take off that much, those k-members are freaking huge and beefy.
