Idle up and down issue

Idle up and down issue I have an issue with the idle when the car is in park or neutral and it varies a good 3-400 rpm. When it's in gear it has a steady idle at 1,200 rpm (perfect for staging).
It has been tuned (mail tune), big cam, normal bolt-ons, o2 sensors delete, exhaust (bullets off headers), trans, gears, etc..
Not sure what other info is needed. It hasn't been driven much this year due to parts being upgraded and replaced. But the idle does not seem to be normal. Any suggestions? Thanks!
Also please this is a track only car, I don't give two sh*ts about what's best for the streets.
