How can you delete o2s?

How can you delete o2s? I know how: IE tune or bypass but why?
Doesnt the O2 provide closed loop operation? If you bypass or trick to 1.0, wont it be open loop/run lean etc?
I am coming from o2/maf 3rd gen where the o2 ruled the ECM thoughts lol. you could trick the MAF not the o2.

Rear O2s (post-cat, this would not be present on your 3rd gen) just monitor cat operation. They can be deleted without any ill side-effects to engine operation. Or are you talking about front O2s (pre-cat)?

Yes, you can delete all four O2 sensors by raising the closed loop threshold so it stays in full time open loop with some other modifications to the tune. I ran that way for a year and a half and have been running that way again for the past six months or so.
To do it right, you'll want to monitor your AFR with a wideband and then edit the fueling tables to provide a proper AFR curve.

EGO Box MY method :
MY device, one I sell, "creates" the EGO output signal, then as BOOST, NOS, etc. is implemented, a signal of Lambda = 1.000 is sent to the EMS.
Thus when NORMAL EGO operation is of a benefit, "millage", etc. the
EGO operation is as seen in the exhaust.
