Temp rising/overheating

Temp rising/overheating I have a 01 ws6 and the other day I was in a drive thru for about 20 minutes and the temp gauge went all the way to 260, then I drove and it got a bit cooler and the gauge went back to about 3/4 but still far from the normal 210. So car temp rises at idle and decreases a bit as I drive. Keep in mind that I live in Arizona so it was about 110 outside. What could be causing this issue?
Also I don’t know if the fans or the t stat are bad but the fans seem to always be on, even after I turn the car off, no key in or anything, the fans still stay on. What could also be causing this? Thanks

If the temp is elevated when sitting still, but drops quickly when moving, consider an air flow problem. A good fan and shroud will move about the same amount of air as moving at 40-45mph.
