If you take your car to an Autozone (or something similar) They'll tell you the code and what it means for free. Then post that and we can help more.

Def. shouldn't throw a code. And, it's not going to do much at all for your car until you program your fans to turn on at 160 as well. I used a hypertech to do that when I got my 160 stat and it runs ~185 all the time now. Before it used to run 195-200 consistently.

A cooler running engine makes more power. (very old trick)
Other then that you don't cook your engine/oil it will survive more abuse.

It is if you live in hotter climates... plus it's a pretty cheap mod and it definitely doesn't hurt anything... unless you live in a ridiculously cold place like Alaska.

It shouldn't give you an SES light.
You should take the stock one off and inspect it though.
Mine stock t-stat had only 41k miles, I took it off to inspect it during my last cam swap and found the rubber gasket on it all cracked up and caught inside the thermostat spring. Luckily I had a new 160 t-stat that I didn't install when I did my first cam swap.
