They will only run while sitting still (or the AC is on), if your going down the road the air will keep the water cool without the fan. If you have 160 or 210 thermostats, they will still come on about the same. You'll get a little more with the lower temp, but it won't matter much.

My Dad's Duramax 3500 is also idiot lighted. The Water temp sits at 210* as soon as actaul water temp hits 190 or so, and stays at 210 untill the water temp hits 240 then it heads up towards the red.

My '03 Blazer has the idiot light gauge too. Just goes up to a hair under 210 and sits there, never budges. Why even bother with numbering the gauge, should just do what ford does and have hot and cold on opposite ends since they took the cheap way out anyways.
