Just to reiterate what others have said, water alone is not good - especially in the heat. Think about it this way. The boiling point of water at atmospheric pressure is 212°F. A stock car gets hotter than that. Admittedly, the pressure within the system raises the effective boiling point, but that's too close for comfort. The coolant has properties that will raise it even further. At least some coolant is necessary. I'm going to look into that Evan's stuff. Sounds worthwhile.

I always was told one (coolant or water cant remember), but one absorbs heat better than the other and the other transfers or releases heat better.

water will absorb the heat faster, but water will boil which is no good, you dont want it to heat that fast in the engine.

exactly the reason you need the mix the water will absorb the heat faster than coolant and coolant will release heat fstr than wtr, otherwise a mess can occur

Actually, the coolant transfers the heat better than the water. Water wants to break down faster when heated...hence the lower boiling point. Absorbing the heat is only half the equation. The liquid must also be willing to give up the heat quickly as well.
