Good decision! It's one less variable you have to worry about when tuning, plus the stock MAF table is already optimized for the stock MAF.

I descreened mine and I've had no bad effects from doing it.

Have had no tuning trouble, or mystery chunks,
with my descreened truck MAF. A 6.0 Truck table
is what I used. But people do report intake tract
geometry based differences sometimes.

Leave it alone. More to lose than gain by playing with it. If absolute power is what you are after, go MAFless and get a SD tune.

Not stock tune here, truck MAF and truck table.
If you're not able to tune for it then I say just
leave the stocker be.

I had a de-screened maf in over the summer, and it caused the car to run too lean in the upper rpm range (5000 +), and it pinged. I replaced it with a stock MAF... and all is well again

I had no performance issues with my SLP 85mm MAF, either before or after I installed Predator tune. It's probably the easiest mod you'll ever do.
