What should I do with it if I'm removing A/C? Just remove the sensor and zip tie the harness plug to something so it won't get snagged?

That's what I would do. It won't hurt anything to be disconnected.

Looking at #1 (again) looks like it could be for the ac compressor clutch.

You could also hook up a WB to it

A lot of these I do not know. Here's the ones I'm positive or pretty sure on.

Picture #8 - There should be a wire coming out of the injector harness, however I don't see it. I belive the connector is purple.

Picture #9 - Purple connector is the MAF, the blue one is the IAT (plugs into the lif of your intake.

Picture #10 - That goes inline with the positive cable to the alternator. There is a locking washer the positive cable and that ground wire IIRC.

Picture #12 - That's a ground wire that bolt to the back of one of the heads.
