Driveability should not be adversely effected. MPG might improve a little and the exhaust note will be louder and more raspy. You should pick up a bit of power too. Of course the exhaust will smell a lot dirtier as well. Using the O2 sims will keep the SES light away and the PCM will never know that the cats are missing then.
As for ground clearance, you will likely lose a little on the drivers side because you will be replacing a flattened pipe with a larger diameter round pipe. Won't be a huge loss of clearance though.
