I've never noticed the second fan coming on, even in the hot Southern summers we have down here.
The car consistently sits at 185 (aftermarket gauge) after running it hard, and just crusing around, it sits just above 180. Scanning the car with Atap tells me that the gauge is like 2* off from what the sensors are reading.
Mileage has been unaffected. City:19/20 Highway:26/27

My stock mileage was 18 in city and I have the 3.23 set. I haven't run a full tank yet since after the headers to compare...

3.73's actually help in the city, cause it takes less work to get the car moving. It also probably helps that the car weighs a little over 200 lbs less than it did when I got it.
My mileage has gone down now in the winter just a tad, 'cause the car doesn't have time to get warmed up before I get to work. It's only like a 10 minute trip. Your tune with the headers is important too. The Best V8 Stories One Small Block at Time
Any thing i should be worried about?
It's been cold here too, -20F windchill the other day. Usually about 0-30F depending on the day but it hasn't been over freezing in a little while. My car will still reach near 200 like it did in the summer, the only difference is my fans don't have to come on to keep it there like it does when it gets hot.
You should get better mileage and more power if you run it warmer. 165 is simply too cool to do your engine any good. I would check your fan settings.
