How much should header bolts be torqued down to?

I wouldn't use a torque wrench. Just go easy on them with a 3/8" drive rachet or box wrench. If it leaks snug them up some more.

I'll look it up for you anyways....hold on.

11ftlbs 1st run, then tighten to 18ftlbs

Stock is 11 lb ft first pass, starting with the center bolts and alternating outward, then a final pass, same sequence to 18 lb ft.

The GM service manual for the 2002 5.7L lists a first pass tightening spec of 11 lb/ft, and final pass spec of 18 lb/ft. That is not a lot of force. Be careful.

Does a torque wrench actually fit in there. I can see getting maybe the first 1 or 2 on each side but what about the rest of them. Just curious since I will be doing headers soon.
