Yes, I know how a 'stat works.....I continually talk people out of buying lower temp 'stats when they think that's thier overheating problem (been selling , and managing, BMW parts for 12 years, www.bavauto.com ).
It's 60 degrees out & I've got plenty of airflow through the rad.
Yes, I also installed an HPP-III at the same time, set at the lowest temps for the fans. They're not coming on, so I would guess that the actual temp is lower than the guage is reading, as some others have suggested.

In other words, it moves. I have a stock 'stat, so typically, in cool air at a decent speed the guage reads a shade under 210. If I drive the car hard then end up sitting in traffic or at a stop light, the guage creeps up to 210, and sometimes a little over.
I have verified all of this with A-tap; sure enough, when the guage is a little under the 210 mark, the car is running in the 200-205 range, etc...
Don't just look at the guage and notice that it is reading in the 210 area... pay attention to where it is actually reading.
Obviously, what M3EATER is referring to isn't consistent with this. Perhaps the guage only starts "working" above a certain temp.
