The coolant level switch that reads the coolant level in the jug could be bad.

Its just bad, replace it. You can try cleaning it but that didn't work for me and I cleaned it to look like new.

It's right below the radiator cap. You'll see the plug. If you clean it and it doesn't work, just unplug the bitch and zip-tie it out of the way. Mine has been like that for over a year. They are well known for giving false signals and whatnot.

It's on the passenger side of the radiator, about 4-5" down from the cap. Another option is just disconnect the wiring and the light should stay off. Believe GM did away with them on our cars in '00? I know my car doesn't have one.

Yeah, mine has been pissing me off by going on and off. This thread has inspired me to go out to the garage and unplug the thing......like I should have two months ago.

That's funny...lately I've been tempted to post up on this. Mine has been going on and off randomly for a couple weeks now, but the coolant level is fine. I assumed it was just a bad sensor, and now I know. Guess I'll be tying mine off tomorrow!
