Do full length headers have to be coated? What about just stainless steel with no coating?

you can buy some high temp spray paint at the auto store. Get the kind that has ceramic in it. Don't know if its as good as professional coating, but I painted my y pipe with aluminum colored duplicolor high temp spray paint. 1200 degrees. came out great.

No they don't have to be coated. Best advice I can give is sand blast the new header and use the "flameproof" paint. VHT has some. It's the 1500 degree paint. I have done this a couple of times and it seems to work great.

But other than that I like the look of bare meatal with all the heat and weld marks so ill end up with a bare grotts with a hi temp clear coat.

And... to answer the last part of your question...

No, Stainless steel headers do not need to be coated, it's more for looks in that case.
