Injector size requirement can be calculated as follows....

Divide the required Engine HP by 2 and then divide the result by the number of cylinders. Example: 500 HP / 2 = 250 250 / 8 = 31.25

In the above example for a 500 HP V8, a 36 lb/hr or larger injector should be chosen.

I think this formula is a little better as it takes into account duty cycle.
lbs/hr=(BHP X BSFC)/(# of injectors X Duty Cycle)
So, with a 500hp engine, BSFC of .45 (forced induction/nitrous guys may want to use .50/.55 here), 8 injectors and a duty cycle of 85% we get 33.09lbs/hr.
We can move this equation around to determine horsepower support . It would look like this:
hp=(lbs/hr X # of injectors X DC)/BSFC
