tach is a tad slow and speedo seems to be great.
Oil pressure is good if working right, water temp is a dummy gauge on 99-02s.
Volts and fuel are meh.

My guages are pretty fucked up. The tach reads about 900 when it's idling at 750, the water temp reads abotu 170 when it's 185 (even with the working 98 guage), my fuel guage just started ******* up (put 8 gallons in it and it reads 7/8 of a tank), who knows about the rest. 
the water temp gauge is what i thought was bad because i just put a 160 thermostat in there and the temp didn't drop at all ...still sitting @ 210 i haven't had my fan temp turn on points adjusted yet though either
would the water temp gauge at least let me know if its over heating???? and can i use the stock sender w/ a new guage???

The dummy guages (99-02) will tell you if it's overheating.
I haven't seen any temp guages that use the stock sensor myself. You're going to have to tie in a fitting with a new guage somewhere else should you choose to go that route. You can run a T in the existing spot, or put it on the back of the passenger side head (there's a plug). You can't remove the stock sending unit because it actually tells the comptuer the corret temperature, just not the driver.
