As far as exhaust valves are concerned, the problem isn't running it with open headers... it is shutting it down with open headers, especially in winter. The cold air will run up the header and cause the exhaust valve to cool very quickly... and possibly crack. I didn't believe it either until I saw it happen.

With a full exhaust system, the length and warmth of the pipes will keep cold air from getting to the exhaust valve.

With no extensions you will also be pulling cold air accross the o2's due to scavenging and this will throw your motor off. I don't know what the long-term damage might be on the valves. LS1 motors aren't usually that bad but I know that a lot of mustangs in the late ninetys couldn't even run longtubes due to exhaust scavenging sucking the oil past the valves.

if they're longtubes, the only thing you have to worry about is burnt O2 sensors. shorties, you may have a problem with valves. i think longtubes are long enough to protect your engine.

prepare for some "WHAT THE **** WAS THAT?!" looks on people when you pass them. i recommend passing cars on the highway at WOT and driving right next to people with their windows down for long periods of time

Yea, what NOBR8KSS said. For the price of a rental, it would pay for the burned O2's and I am SURE you will be sucking fumes along the way. In all my camaros, I always have to keep the hatch closed or it gets dizzy inside, and this is with a stock system.
