The stock thermostat of the 2000SS is rated at 195F. The two fans come on at low speed (operated in series) at around
216F. The two fans are switched on in parallel at around 236F.
To switch from series to parallel operation (in series the fans each see only half the battery voltage, in parallel, they see the full battery voltage) there is a third fan relay.In parallel operation they run at high speed.

I had the same problem. In your engine compartment there is a fuse box on the drivers side. Inside the box there are 2 relays (the 1" x 1" things you were talking about) for the electric fans you might want to check them out. Also with a hypertech programmer you can change the temps you fans come on at.

How do you get these fuses out? And how do you check them since there aren't clear?

you can check them with a volt meter, or just go to autozone and buy two new ones. Just pull them straight out with a set of needle nose pliers. They will probably be under $10.
