when moving the 160 stat keeps the engine cooler, making more power.
when sitting still the 160 stat and stock fan settings act JUST like a stock stat.
just because it opens earlier doesn't mean its gonna keep the engine below stock fan settings when sitting still...that's retarded.
as for cold weather, it will heat up just fine, it will just take a minute or 2 longer...if that.
i ran one of my older cars in near zero degree weather with a 160 stat. it was warmed up to 175* (normal for the car) within about 5 mins, and driving it stayed there.
how would the oil not get warm enough?? as the engine "cools down too much" the stat closes...bringing the engine temps back up.
your thinking is flawed severly.

there are probably small gains to be had by going with the 160.
i think the chances of damage from overheating are reduced by running the cooler stat AND having the fans changed.
instead of the engine getting up into the 21x deg range for the fans to come on, you can have them reset to turn on in the 19x range.
for the small cost of the state, i say its worth it...since you're getting tuned anyway.
