I don't know if King makes undersized bearings for the LS but you can check there if you haven't already.
Two other options. Get your bearings coated at Calico, Polydyne, etc. or close up the housing bores a thou to tighten the clearance.

Polishing a whole thousandth would be bad. Just have the crank turned another .001 or .002 and run a .020 or coated .020 and you are there. There are no .019 mains yet that I know of unless Steve is right and King makes some?

I had my thinking backwards. You need more clearance not less. So coating the bearings would make things worse.
Short answer, no you can't polish the crank a thou. You would never get the journals round, without a barrel shape or taper.
Torque up the mains and check the housing bore in the block with a dial bore. See what you have for size. These engines need the main bearing bore size at the high limit of 2.7515" or you end up having too tight a clearance. For example, at 2.7509" the low limit, with standard size crank you end up needing two sets of mains to get the correct clearance. One set std. and a set one over, half a set of each.
If the crank is ground to the correct size, I think you will find the housing bores are on the tight side. Align honing the block to the high limit should get the clearance where you need it to be for your .020" under bearings.
