To answer your original question, I'm building a similar 3.905" bore LS1 using Mahle forged, coated pistons designed to be used with stock rods (Part No. LS1340905F04 - $500 from Flatlander Racing), and stock LS2 crank and floating pin rods (which should be readily available used). Everything I've read indicates that the stock pieces should be able to easily handle any level of power you can make in a NA engine.

Thanks Mkelcy, the LSX guy is going to call me and tell me what kind of pistons I want. I told him the best pistons for that engine. When I talk to him again, I will tell about the Mahle.

They needed to grind the crank?? I have only ever heard of one needing to be polished. Was the crank really scored up?? Maybe they really only did a polish and mistakenly said they ground it.........

It might be a preference thing. I usually prefer to have a crank ground so I know it's straight and round, especially a used crank. Also, that way I can order one set of bearings, and set bearing clearances where I want it. However, it seems they're grinding the crank before they get rod bearings...odd.
